FINALLY! After all the tacos and burritos, burgers and fries, there comes a little bit of Americana that can join the ranks of niche places in trendy Temecula, CA by providing your taste buds with food you don't taste everywhere else. In this case you won't taste this food anywhere else, outside of Bayou country, that is. Debuting in the middle of January at 27470 Jefferson, Suite A2, to the right of Tony Roma's and next door to the barber shop of the center is the BAYOU Kitchen, open Tuesday - Thursday 11AM-8PM, Friday & Saturday 11AM-9PM, and Sunday 11AM-7PM.

On Monday you can fast and day dream about the Tiger Shrimp, Fried Louisiana Oysters, Crawfish Tails, or genuine Jambalaya you sampled the six days prior. For those with less exotic palates, like me, who just want a taste of what they have known from back in the 'hood, there are available barbarque ribs (Fri-Sat only), catfish, crab cakes, red snapper, chicken, and my personal delight, collard greens (Thur-Sun), all done New Orleans Cajun/Creole style.

"I'm just filling a need," says modest business owner Greg Holt, who hails from LA's South Central by way of Salt Lake City, moving here to Temecula about four and a half years ago. "We have been very busy and doing well without advertising." That's not quite true. You see, Greg and his wife Valerie talked up the opening to 'The Rare Essence' , 'Benford's Gallery' , and 'Aaron's Paid To Fade' (barber shop by Ace Hardware), "all within a half mile of this location. They definitely jumped started our business." Head chef Bernard wanders out and nods in agreement. The thirty-nine year old Greg says he is following an old family expression, 'Happy are those who dream dreams, and are willing to pay the price to make them come true'.
